INTRODUCTION
Although agriculture is the main source of livelihood for the majority of smallholder farmers, post-harvest losses have been among the major contributors to food scarcity due to low-value addition and inadequate cold chain facilities, particularly for horticultural produce such as fruits and vegetables. The different fruits and vegetables like carrots, tomatoes, potatoes, ginger, and green leafy vegetables among others are important protective foods because of their nutritional value. Value addition of such fruits and vegetables can not only reduce wastage but also increase the quality of products and their shelf life and consequently guarantee nutritional security among the people. This five (5) day course will equip participants with hands-on knowledge of different methods of value addition of different horticultural crops.
